How to Sharpen a Knife

4. A towel or non-slip surface (to prevent the stone from moving)
5. Your dull knife

Step 1: Prepare the Stone

Start by placing the damp cloth or sponge on your work surface to prevent the stone from slipping. Place the coarse-grit side of the whetstone facing up. Ensure the stone is properly stable before proceeding to the next step.

Step 2: Proper Knife Positioning

Hold the knife with its edge facing away from you, perpendicular to the stone's surface. For safety, maintain a firm grip on the handle, keeping your fingers away from the sharpening zone.

Step 3: Building the Proper Angle

To achieve the correct angle for sharpening, position the spine of the knife against the stone. Hold the knife at a consistent angle, typically between 15 and 20 degrees. You may find it helpful to start with a slightly wider angle and adjust accordingly until you find the best balance.

Step 4: Beginning the Sharpening Process

Apply light pressure and move the blade across the stone in a smooth motion, maintaining the chosen angle. Remember to always move the blade away from your body for safety purposes.

Step 5: Repeating the Process

After several strokes on one side of the knife, flip it over and repeat the process on the other side. This ensures even sharpening and preserves the symmetrical edge of the blade. Maintain the same number of strokes on each side to avoid creating an uneven edge.

Step 6: Testing the Sharpness

To gauge the sharpness of your knife, carefully check its edge for a bur. If the bur is felt evenly along one side, proceed to the next highest grit and repeat steps 4 - 6 . If not, repeat the sharpening process on the same stone until the edge develops a bur.
